Using Native Ingredients Respectfully

Here at Armora, we deeply value the cultural context of every ingredient, believing it's as significant as its taste.

Our ongoing exploration of native ingredients is made possible by our partnerships with First Nations friends, suppliers, and mentors. One such invaluable collaboration is with Warndu, an organization dedicated to using native plants to revive cultural heritage.

In addition to Warndu’s native produce, we provide resources to engage culturally with these ingredients. This makes Damien and Rebecca, the founders of Warndu, ideal voices to discuss the rising interest in native ingredients and their role in enriching Australia’s culinary landscape.

Interview with Damien and Rebecca:

What was your vision when launching Warndu?

Damien: Warndu, meaning ‘good’ in the Adnyamathanha language, celebrates diverse Aboriginal nations and their culinary traditions. Our work focuses on cultural restoration, aiming to respectfully collaborate with Aboriginal nations to preserve the deep stories and language associated with food.

Why do you think there’s a growing interest in native ingredients?

Rebecca: People are increasingly drawn to environmental sustainability, cultural respect, and healthy, flavorful food. Native ingredients offer a blend of novelty and ancient history, challenging perceptions of what local food truly means.

Is accessibility a factor in the popularity of native ingredients?

Rebecca: Accessibility has expanded beyond high-end restaurants to include cafes in every neighborhood. Major corporations are also incorporating native ingredients, sparking curiosity and broadening awareness, albeit sometimes without the same taste integrity.

How has this growth impacted the native foods industry?

Rebecca: Demand now outstrips supply, necessitating more growers to meet market needs. Accessibility has increased, with products like Sharon Windsor’s available at Woolworths in Sydney, reflecting a growing normalization of native ingredients.

Advice for engaging authentically with native ingredients:

Rebecca: Embrace learning and don’t fear asking questions. Authentic engagement requires curiosity and respect for the rich cultural heritage embedded in these ingredients.
